Whole grain Spanakopita(Greek Spinach Pie) from scratch

Sumptuous Savory Pies like these are staple in Greek cooking.Thanks to Ivy and her clearly explained recipe I was able to recreate her traditional whole grain Greek Spanakopita(Spinach Pie) from scratch.

A short cut for the crust is to use the store-bought phyllo.In the mood for a more wholesome pie,and prior experience of rolling tissue-thin strudel dough ,I was willing to take the tougher route.Rolling each sheet with passion for good food.Gladly the result was worth every muscle,a flaky and absolutely filling pie.Be sure the whole wheat flour is fine ground ,or the whole wheat pastry flour should also be good.

Not to mention the filling is generously green ,mild tasting spinach in combination of other sharp or bitter greens and sprinkle of chunky salty Feta cheese.
Recipe : Whole Wheat Spanakopita from scratch adapted from Ivy's Original recipe at Kopiaste... to Greek Hospitality

Serves 4
Ingredients
For the Pie Filling
2 pounds fresh spinach ,rinsed
2-3 cups of other mixed greens and herbs(I used Escarole,Kale,Parsley,Oregano and Fenugreek)
1 medium onion or 2 shallots ,finely chopped
1 medium Leek or 4 spring onions, finely chopped
2 teaspoon extra virgin olive oil
2 big cloves garlic,peeled and chopped
2 Organic Eggs(vegan substitute : 1 cup tofu or 1/4 cup flax seed meal),lightly whipped(reserve a tablespoon for brushing on pie)
3/4 low-fat Greek Feta Cheese ,crumbled
1 teaspoon freshly ground black pepper
1/2 teaspoon sea salt

For the Crust
2 1/2 cups Fine ground Whole wheat flour
4 tablespoon Extra virgin olive oil,divided
1/2 teaspoon sea salt
1 teaspoon vinegar
1 cup water(more or less)

Method
Prepare the Dough
Combine the flour and salt in a large mixing bowl. Mix the water,2 teaspoon oil and vinegar in a measuring cup. Add the water/oil mixture to the flour and make a soft dough and knead for 2 minutes. Make sure it is not too dry, add a little more water if necessary.
Shape the dough into a ball and transfer it to a plate. Oil the top of the dough ball lightly. Cover the ball tightly with plastic wrap. Allow to stand for 30 minutes.

Prepare the filling
Heat oil on medium in a large pan, add the garlic,saute for 10-20 seconds until aromatic.Add the onions,leeks,salt,pepper and saute 3-4 minutes until onions are translucent.Now add in the greens and increase the heat on medium-high,and constantly stir and cook until greens are wilted and most water is soaked in 6-8 minutes.Turn off the heat and after completely cooled,mix in the eggs and feta cheese.

Roll the dough , assemble and bake
Sprinkle some flour on your work surface and also on the dough.Divide the dough into smaller portions,depending on the size of sheets needed and the baking pan used.
One can certainly use a pasta machine to roll the dough.A more traditional method is rolling by hand.Use a longer rolling pin for better results.Shape each small portion into a ball and then flatten into a disc.Roll it very thin ,longer than the diameter of you baking pan.Brush about 1 teaspoon of oil over the rolled sheet of dough.Now roll the remaining portions of the dough and place each over the other ,be sure to brush with oil between them for a flaky crust.
For the base crust,I used 4 rolled sheets of dough and 3 for the top crust.
Preheat oven at 180 degrees C (350F).Brush the baking pan(8x8 inch) with oil and gently place the 4 rolled sheet over the pan and press slightly until it touches the base of the pan all around.Now place the prepared spinach mixture and spread evenly.Cover with 3 rolled sheets of dough.Bring together both the base and top sheets,fold and press to seal it completely.Use a sharp knife to score on top in triangular portions.
Brush with reserved whipped eggs all over the pie.Bake for 25-30 minutes until the top is golden brown.Cool on rack for 15 minutes. Slice and serve.

Cruciferous Challenge and Cauliflower Tabbouleh with Preserved Lemons.

Cruciferious is a fancy name for the family of vegetables known to botanists as Cruciferae or alternately, Brassicaceae.Like most other vegetables, cruciferous vegetables are good sources of a variety of nutrients and phytochemicals that may work synergistically to help prevent cancer.Read more about it here.

For Health Nut Challenge 5 lets get cooking with the crucial to the diet,Cruciferious veggies. Here are 2 simple steps to participate in the challenge :

1.Create a uniquely healthy side dish,soup,salad or main entree ,with one or more of the following Cruciferious vegetables :

* Kale
* Collard Greens
* Broccoli
* Cauliflower
* Cabbage
* Brussels sprouts
* Kohlrabi
* Turnip
* Radish
* Bok Choy
* Arugula
* Water cress.

2.Leave the link of your post in the comments section(by April 30th) while also mentioning in your post about the Health nut challenge.Old entries can be recycled,I just need the different ideas to incorporate these vegetables in everyday cooking.

Cauliflower Tabbouleh

Often times I have to think beyond curries to get my family interested in eating vegetables.The tabbouleh is an earthy Middle eastern salad made with bulgur,cucumber and lots of parsley.Cauliflower further enhances the nutrition of the salad.I add preserved lemons for a tangy bite to the salad.

Recipe adapted from Diabetic Cooking

Ingredients
1/2 a head of medium cauliflower,separate the florets
3/4 cup Bulgur wheat(can also use quinoa or roasted buckwheat)
1 cup flat leaf or curled parsley
1 small onion ,finely chopped
1 clove garlic
1/4 teaspoon cumin seeds
1/2 a medium preserved lemon(recipe follows),chopped
1 teaspoon black pepper,freshly ground
1 teaspoon ground cumin
1 tablespoon Extra virgin olive oil

Method
Bring 2 cups of water to a boil,add salt and bulgur wheat.Cook until tender about 15-20 minutes,drain excess water.
Coarsely grind the cauliflower,garlic and parsley in a food processor.Heat oil in a pan on medium,saute onion and cumin seeds for a minute,add the ground cumin and processed cauliflower mixture.Cook only for 4-5 minutes until tender.Mix in the cooked bulgur wheat.Turn off the heat and mix in the preserved lemons.Serve warm or cold on a bed of dark leafy greens like romaine lettuce or kale.

Moroccan Preserved Lemons

The preserved lemons are an quint essential relish of Moroccan cooking.The pickled lemons add a delicious tang to any salad,stew or entree.
Recipe adapted from Alia's Moroccan cooking video.
Ingredients
6 fresh lemons,rinsed
1/4 cup of salt
1 sterilized jar that can fit all the lemons

Method

Step 1 Cut off any stems of the lemons.Using a sharp knife cut vertically, not all the way to the bottom,make sure the base is still attached.Turn the lemon upside down.Cut again vertically while keeping the base intact.
Step 2. Use a teaspoon and stuff about 1/2 teaspoon of salt on each of the slit of the lemon.Repeat with rest of the lemons.Place in a sterilized jar,make sure all lemon are snug in the jar.Sprinkle another teaspoon of salt over the top.
Step 3 Keep in a dark cool corner of the house for 4 days.Then remove only to check if the juices have started to flow out in the lemons.Return to the corner and keep another month until lemons are all soft and pickled.Every week in between ,swirl the bottle to make sure all the lemons are submerged in juices.
Once pickled can be store in refrigerator for up to 3 months.Before using,discard seeds, rinse in cold water to remove the excess salt.Dice or slice,use in salads ,stews,tagines or Whole grain entrees.

Berry Green Smoothie and meet our new love.

Swindled in bargain,I have had it with the "Ordinary",none were dependable for more than a year.Say Hello to the ,Robust, Capable, Reliable,befitting a health nut's cautious diet,just the companion I was looking for.A dream kitchen machine ,that can juice,cook,freeze ,blend and grind,with endless possibilities of whipping up good food fast,its the Vita-mix. The machine was in my wish list for long since I reviewed the Ice dream Cookbook,that mentions the amazing power of Vita mix to create a fresh and healthy home made Ice creams.Then Bharti's impressive review added to the desire while confirming the capabilities of the machine.And an equally impressive demo of the machine at Costco,also got someone keenly interested,Mr.Health nut.Glad we shared the same desire,brought the beauty home.Its been working wonders so far.The smoothies are the easiest ,just about any kind of fruit and vegetable can be blended to a tasty concoction.

The Berry Green Smoothie
Green is always associated with good health.All the green foods are the best nutritionally ,although not always favorable taste-wise.That's were the Vita mix makes the difference by perfectly blending the greens with the fruits,for an irresistible smoothie each time.Following is just one sample of green mixed with fruits and vegetable,one can use any combination of greens(like kale,chard,collards) with ripe fruits. A smoothie like such with fruits,greens and vegetables all in one,can deliciously fulfill the body daily need of vital nutrients.

Ingredients
Serves 3
1 Ripe Avocado,cored and peeled
2 cups baby spinach(can also use 4-5 leaves of Kale or collards)
1 cup frozen berries( I used cranberries)
1 Organic Apples,cored and diced
1 teaspoon ginger,freshly grated
few sprigs of parsley
1 cup cold water

Method
Rinse the greens in cold water.For Organic fruits just rinse under tap water.The guide in Vitamix recommends washing the fruits and veggies with specially formulated soap to wash away all the pesticides.
Cut as needed and blend all the ingredients together in the Vita mix from low to high speed until smooth,takes about a minute.

Asparagus Souffléed Omelet

Although Spring is officially here in North eastern Ohio, the trees are still shy of green leaves and vibrant blossoms.But the signs of budding in the trees and singsong birdies positively assure me,spring will be in full bloom soon.Speaking of which, the succulent asparagus blooming in the stores are also a sure sign of coming of spring.
These tender spears are rich in folate,essential for heart health and to prevent birth defects during pregnancy.Its also rich in potassium ,vitamins and is considered a natural diuretic[a diuretic increases the production and flow of urine from the body, used to remove excess fluid from the body].

Asparagus come in varying thickness,from pencil-thin to nearly an inch.Can be purple ,white or green.For freshest asparagus pick the ones with tight and closed stalk with completely smooth and firm stalk.The bottom woody inch or two of any asparagus should be trimmed and discarded.To keep asparagus for longer,cut off the woody base and let the bunch stand in an inch of water in a container in the refrigerator.Tastes best when steamed or lightly sautéed.

The low-carb Asparagus Souffléed Omelet recipe comes from Sara's Moulton Quick and Easy weeknight meals.Souffléed Omelet is a cross between an omelet and a Soufflé.Make sure you beat the egg whites just to soft peaks;otherwise they won't fold properly in to the egg yolk base.Any left over vegetable such as broccoli or spinach will make a fine filling for this Souffléed Omelet,so consider this a clean-out-the-fridge dish.Serve for any meal of the day with salad greens or toast with fruit spread.

Ingredients
6-8 asparagus,washed and trimmed
1/2 a medium onion,sliced
1 clove garlic,chopped
1/2 teaspoon each of black pepper and salt
1 tablespoon Extra virgin Olive oil
4 large Organic eggs,White and yolk separated
1 tablespoon fresh herbs(parsley,cilantro ,tarragon or dill)
1 tablespoon all-purpose flour
Method
Preheat oven to 375F.
Cut the asparagus cross wise in to 1/4-inch pieces.
Heat a pan with teaspoon of olive oil,add the onions,saute until lightly caramalized about 3-4 minutes,then add the garlic and asparagus.Cover and cook on low flame until asparagus is crisp-tender.Season with salt and pepper.
In another non-stick pan with heat proof handle or cast-iron pan ,heat the oil just until warm and remove from heat.Whisk egg yolks with flour,1/2 teaspoon salt,and 1/4 teaspoon black pepper until mixture is fluffy,about 3 minutes.Beat the egg whites using an electric mixer or a whisk until they hold soft peaks;fold them in to the yolk mixture gently but thoroughly ,and pour the egg mixture in to the skillet,spreading it evenly.
Bake the Omelet in the center of the oven for 10 minutes,or until it is puffed and cooked through.Remove from oven,place the filling in the center and fold using a spatula or for an attractive presentation,cut rounds using cookie cutter and place the filling between them.Sprinkle the herbs.I served it with drizzle of hot and sweet maggi tomato sauce alongside toast and home made mango jam.

Asparagus Souffléed Omelet is my entry for Weekend Herb Blogging,hosting this week is Prof. Kitty from The Cabinet of Prof. Kitty.

Super Grain,Green Freekeh(wheat) Vegetable Pilaf

Green Freekeh(pronounced free-ka) ,the little known ancient grain of the Middle East(Eastern Mediterranean) has all the nutritive benefits to qualify as a super grain alongside Quinoa,Farro,Spelt and Amaranth.This green wheat is made by picking the wheat before its fully mature ; parching ,roasting and smoking in wood fire finally threshing and drying it.Since its picked young and involves less processing,Freekah has it all,to make a dieter's dream come true.Its a low carb(low glycemic index < 55) food high in fiber,has more protein, vitamins, and minerals than other grains commonly consumed like White rice,brown rice or wheat.The grain is also unbelievably rich in calcium and iron.
Discovered by chance during our monthly shopping at the Middle eastern store,this unique grain is also available in health stores.
Vegetable Pilaf is a flavorful recipe with this versatile grain,here is the list of many other ways to cook up freekeh.
