Fulfilling Falafel

Falafel is a middle eastern food prepared by combining uncooked soaked chickpeas with a blend of exotic herbs and spices and formed in to balls and deep fried. Served usually in a pocket pita with salad slathered with hummus or simply tahini sauce.Shallow frying the falafel in olive oil instead of deep frying is much healthier.

Ingredients you'll need are
2 cups Chickpeas Soaked Over night
1/4 cup onion, chopped
1/4 cup mint, or cilantro or parsley chopped
1 clove garlic clove
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon sea salt
1/4 teaspoon baking soda
Extra Virgin Olive Oil to shallow fry
Whole wheat pitas
Salad mix (chopped lettuce, red cabbage or spinach,sliced carrots or radish)

Method
Mix and blend chickpeas, onion, Mint, garlic, cumin, coriander, salt and baking soda until mixture is coarse.

Shape in to patties.


Heat a small non stick pan and add 1/4 cup of Extra Virgin Olive Oil. Shallow Fry the patties until lightly brown on both sides.


To make the falafel wrap , place some salad mix inside each pita or pocket pita, bits of falafel patty and drizzle with some tahini sauce or spread some hummus.





To prepare Tahini Sauce

Blend together
1/2 cup roasted sesame seeds
3 cloves garlic
1/2 teaspoon salt
2tablespoon of EVOO
1/4 cup lemon juice

Drizzle on Pita wraps with Falafel or meat
