Crunchy Top "Faux"tatoes




2 pounds "hash brown" turnips
1 whole onion, chopped
1 pound sharp cheddar cheese
1 16 oz. package sour cream
3 ounces cream cheese
1/2 cup heavy cream
1/4 cup beef broth
1 cup crushed pecans
3 TBS butter

Peel turnips and shred with a cheese grater into hash brown shapes. Spread turnips in 9x13" baking dish. Mix onions, cheese, cream cheese, heavy cream, almond milk and sour cream until completely mixed. Mix in turnips. Melt butter, mix with pecans and sprinkle on top. Bake at 350°F for 30 minutes. (or cook in crockpot for 10-12 hours)

NUTRITIONAL COMPARISON:SERVES 8 (only changing the turnips)
WITH POTATOES: 504 calories, 36.5 carbs, 2.3 fiber, 9.1 protein
WITH TURNIPS: 413 calories, 16.5 carbs, 1.5 fiber, 9.1 protein
