Chocolate Sesame Whole Wheat Wreath Bread


I simply love giving the Daring baker challenges a purely chocolate make over.


The 2010 December Daring Bakers’ challenge was hosted by Penny of Sweet Sadie’s Baking. She chose to challenge Daring Bakers’ to make Stollen. She adapted a friend’s family recipe and combined it with information from friends, techniques from Peter Reinhart’s book.........and Martha Stewart’s demonstration.


The concluding challenge of the year couldn't have been more delicious.Stollen is a rich Holiday bread,or should I say cake,with all its deliciously packed sweet, nutty, fruity and zesty flavors.I choose to call mine bread since I lessened the sweetness and the texture is dense with use of whole wheat flour.More than the richly dark chocolate what stands out the most of the flavors,is the orange zest,so please do not skip this important ingredient for the added zing to this sensational bread.




Recipe :Chocolate Sesame Whole Wheat Wreath Bread
Makes one medium wreath Serves 5-6 people

Ingredients
For Bread Dough
1/4 cup lukewarm water (110º F / 43º C)
1 packages (2 1/4 teaspoons) active dry yeast
1 cup Skimmed Organic milk
4 tablespoons unsalted Organic butter or virgin pressed coconut oil or Pure Ghee
2 1/2 cup whole wheat pastry flour
1/2 cup unsweetened cocoa powder
1/4 cup Pure cane sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 large Organic eggs, lightly beaten
Grated zest of 1 lemon and 1 orange
1 teaspoon pure vanilla extract
1/2 teaspoon (5 ml) lemon extract or orange extract
2/3 cup raisins or dried cranberries or dried mixed fruit
3 tablespoons Orange juice
6 red glacé cherries or fresh cranberries(roughly chopped) for the color and the taste. (optional)
1/2 cup flaked almonds
For topping
2 tablespoon Pure Organic honey
2 tablespoon brown sesame seeds
1/4 cup semi sweet chocolate chips(good quality - 60% cocoa)


Directions:
Soak the raisins
In a small bowl, soak the raisins in cold water (or in the orange juice from the zested orange) and set aside.

To make the dough

Pour warm water into a small bowl, sprinkle with yeast and let stand 5 minutes. Stir to dissolve yeast completely.

In a small saucepan, combine milk and butter over medium - low heat until butter is melted. Let stand until lukewarm, about 5 minutes.

Lightly beat eggs in a small bowl and add lemon and vanilla extracts.

In a large mixing bowl (or in the bowl of an electric mixer with paddle attachment), stir together the flour, cocoa powder,sugar, salt, cinnamon, orange and lemon zests.

Then stir in (or mix on low speed with the paddle attachment) the yeast/water mixture, eggs and the lukewarm milk/butter mixture. This should take about 2 minutes. It should be a soft, but not sticky ball. When the dough comes together, cover the bowl with either plastic or a tea cloth and let rest for 10 minutes.

Add in the mixed peel, soaked fruit and almonds and mix with your hands or on low speed to incorporate. Here is where you can add the cherries if you would like. Be delicate with the cherries or all your dough will turn red!

Sprinkle flour on the counter, transfer the dough to the counter, and begin kneading (or mixing with the dough hook) to distribute the fruit evenly, adding additional flour if needed. The dough should be soft and satiny, tacky but not sticky. Knead for approximately 8 minutes (6 minutes by machine). The full six minutes of kneading is needed to distribute the dried fruit and other ingredients and to make the dough have a reasonable bread-dough consistency. You can tell when the dough is kneaded enough – a few raisins will start to fall off the dough onto the counter because at the beginning of the kneading process the dough is very sticky and the raisins will be held into the dough but when the dough is done it is tacky which isn't enough to bind the outside raisins onto the dough ball.

Lightly oil a large bowl and transfer the dough to the bowl, rolling around to coat it with the oil. Cover the bowl with plastic wrap.
Put it in the fridge overnight. The dough becomes very firm in the fridge (since the butter goes firm) but it does rise slowly… the raw dough can be kept in the refrigerator up to a week and then baked on the day you want.

Shaping the Dough and Baking the Wreath

1. Let the dough rest for 2 hours after taking out of the fridge in order to warm slightly.
2. Line a sheet pan with parchment paper.
3. Preheat oven to moderate 350°F/180°C/gas mark 4 with the oven rack on the middle shelf.
4. Punch dough down, roll into a rectangle about 8 x 12 inches and ¼ inch (6 mm) thick.


Starting with a long side, roll up tightly, forming a long, thin cylinder.
Transfer the cylinder roll to the sheet pan. Join the ends together, trying to overlap the layers to make the seam stronger and pinch with your fingers to make it stick, forming a large circle.
Using Sharp knife, make cuts along outside of circle, in 2-inch (5 cm) intervals, cutting 2/3 of the way through the dough.
Twist each segment outward, forming a wreath shape.Proof for approximately 2 hours at room temperature, or until about 1½ times its original size.
Drizzle with honey all over and sprinkle the sesame seeds,evenly covering the top of the wreath.

Bake
Bake the wreath for 20 minutes, then rotate the pan 180 degrees for even baking and continue to bake for 20 to 30 minutes. The bread will bake to a dark mahogany color, should register 190°F/88°C in the center of the loaf, and should sound hollow when thumped on the bottom.

Chocolate Finishing
Melt the Chocolate chips over double broiler or in the microwave until completely melted and glossy.Drizzle all over the baked wreath.Cut and serve warm. When completely cool, store in a air tight container.The flavor intensifies the next day,makes a delicious treat with morning cuppa.

Almond Thumbprint Cookies with Fruit Preserves


With holiday treats stocked in stores,I keep an eye out for new and easy cookie ideas during this time of the year.I happen to see this thumb print cookie tray in the store,with not so attractive or should I say complicated ingredient list.I just needed the recipe to experiment with my own healthier additions,which I thankfully could Google it up.
I mix Almond flour(fine ground raw almonds is equally good) with the wheat flour that gives a more hearty texture to the dough.And also the fresh cranberry preserves were the best match for the filling.All in all,an incredibly nutritious treat.

Recipe : Almond Thumbprint Cookies with Fruit Preserves
Makes a dozen

Ingredients
3/4 cup whole-wheat pastry flour
1/2 cup almond flour, or almond meal
1/4 cup all purpose flour
1/2 cup pure cane sugar,divided(reserve a little to sprinkle on top)
4 tablespoons cold unsalted Organic butter(cut in pieces) or virgin pressed coconut oil or pure Ghee
1 large Organic egg, lightly beaten
2-3 tablespoon cold milk.
1/4 teaspoon vanilla extract

1/4 cup or little more of Home made Fruit Preserves(Cranberry,Cranberry Apple,Plum,Mango,Strawberry or Apricot)

Method
Preheat the oven to 350F.
Making dough by hand:
Whisk together sugar, flours and salt in a bowl.
Rub or cut the butter or other fat used ,into the sugar and flour mixture until it has the consistency of coarse crumbs. Make a well in the center of the flour and butter mixture and pour the beaten egg and vanilla extract into it.
Use a fork to incorporate the liquid into mixture and then use your fingertips.
Knead lightly just until the dough comes together into a ball.
Shape the dough into a flat disk and wrap in plastic wrap. Place the dough in the refrigerator and chill for at least 30 minutes.
With a food processor:
Put sugar, flour, and salt in the bowl of the food processor and pulse a few times to mix.Add butter and pulse a few times until the mixture has the consistency of coarse meal.Empty food processor's bowl onto your work surface.
Make a well in the center of the mounded flour and butter mixture and pour the beaten egg and vanilla extract into it.Use a fork to incorporate the liquid into the solid ingredients then use your fingertips.Knead lightly just until the dough comes together into a ball.Shape the dough into a flat disk and wrap in plastic wrap. Place the dough in the refrigerator for at least 30 minutes

Shape the Cookies
Roll the dough into a circle about 1/2 inch thick,cut in circles using a cookie cutter about 2 inches along diameter.Press each circle using thumb to make a light indentation into the top.Sprinkle a little sugar all over the cookies.Place them on a cookie sheet.Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes,top is lightly golden brown. Cool and serve.

Chocolate Truffles


Thanks to Julie's article ,I have learned :
*Rule number one of picking a healthy chocolate,buy Dark.
*Lesser in sugar the better the health benefits of a chocolate.Eating it with fruits like strawberries can add to its goodness.A hot cocoa is much more beneficial than hot chocolate.
*60%-70% is a best range of cocoa to look in a dark chocolate.
*The dutch processed or any alkali processed cocoa powder has less antioxidant flavonoids.
*Finally, liking the less sweet chocolate is an acquired taste,so don't give up with just one attempt.

Now with rules in mind and I pick this fine chocolate and roll up these soul-calming melt-in-the-mouth delicacies to satisfy my chocolate appetite.
Named after the exotic fungi,the chocolate truffles are of the finest confectioneries a chocoholic will ever know of.Its pure chocolate to the core.I did keep a nutty surprise in the middle and coated them all with cocoa for the original truffle finish.With heavy cream replaced these are relatively lower in fat ,another reason to make them more often than just on festive occasions.


Recipe :Low Fat Chocolate Truffles with Almond Surprise

Makes about a dozen truffles
Ingredients
8 ounce(1/2 pound) Premium Dark chocolate(at least 60% cocoa)
1/2 cup Organic Reduced fat milk
1/2 teaspoon pure vanilla extract
About 2 tablespoon unsweetened Cocoa powder
Few toasted Almonds

Method
Break the chocolate to smaller pieces in to glass or steel mixing bowl.
Bring the milk to a boil in a saucepan.Carefully pour it over the chocolate in the bowl and stir it using a spatula until the chocolate is completely melted.If the chocolate doesn't not melt completely then place over a double broiler until melted. Stir in the vanilla.Place in the refrigerator just until the chocolate is solid enough to to work with,about an hour.
Sift the cocoa powder on to a large plate.When the chocolate mixture is ready, take about 2 teaspoon of the mixture and roll between the palms of your hands.Press in an almond in to the center and roll again until round.Now coat the ball with the cocoa by rolling it several times until evenly coated.Finish with rest of the mixture.Can be stored in fridge for 2-3 weeks.Serve them at room temperature.


Some enticing flavors to try :
Coffee : mix 1 teaspoon of instant coffee powder in the ganache or use 1/2 cup espresso coffee instead of milk.

Orange :A tablespoon of orange zest adds the citrusy zing.

Ginger :Mix 1/4 teaspoon of fresh ginger for hint of the spice.
Spice : Spice up with 1/4 teaspoon of spices like cinnamon ,cardamom and cloves.

Nuts : Roll them in chopped almonds or pistachios or hazelnuts or coconut flakes for a nutty finish.

Dried fruits: Mix some dried fruits like cranberries for a chewy fruity touch.




Pretty pine cones are all over my yard.I saved a few and scented them with some cinnamon oil ,makes a great room freshers and a pretty decor at the same time.

Dates Chocolate Rugelach , a Pastry for Peace


Too many tears have flowed. Too much blood has been shed. All of us have a responsibility to work for the day when the mothers of Israelis and Palestinians can see their children grow up without fear; when the Holy Land of three great faiths is the place of peace that God intended it to be; when Jerusalem is a secure and lasting home for Jews and Christians and Muslims, and a place for all of the children of Abraham to mingle peacefully together as in the story of Isra, when Moses, Jesus, and Mohammed (peace be upon them) joined in prayer. - President Obama

Can food bring people together?.Evidently it does ,irrespective of our faiths and beliefs who can resist these delectable pastries?.In short food brings joy ,mends relations and fosters love.

Pastries for peace is a food event organized by Rosa of Rosa's Yummy Yums to bring peace in Middle East through the most loved "Pastries".4 days past the deadline of the event,I'm late in making the post,but I'm hopeful dear Rosa would accept this late entry.

Coming to the pastry I fell in love with instantly,the Rugelach.These morsels of love are a traditional treat for Rosh Hashanah, the Jewish New Year.Made with cream cheese , butter and fruity filling these are totally addictive.I use the naturally sweet dates combined with dark chocolate and cocoa,these are not overwhelmingly sweet,the crust is melt-in-the-mouth delicious despite cutting down on half the butter and using lower fat cream cheese.A perfect treat for any holiday.

Recipe adapted from CIA Culinary Intelligence

Ingredients
2 cups whole wheat pastry flour(or use fine ground wheat flour)
8 ounce low fat cream cheese, at room temperature
4 tablespoon unsalted butter, at room temperature
1/4 teaspoon kosher salt

For the filling
6-8 medium Soft Dates(or use a cup of any fruit preserve)
1 teaspoon unsweetened Cocoa powder
1/2 cup dark chocolate,chopped
1/2 cup toasted pecans or walnuts
1/2 teaspoon ground cinnamon

Method
Make the Dough
Sift the flour and salt into a bowl and set aside.
In a stand mixer fitted with the paddle attachment or a food processor, cream together the butter and cream cheese on medium speed, about 2 minutes. On low speed, mix in the sifted dry ingredients(flour mixture) until just combined. Scrape down the bowl as needed to blend evenly. Wrap the dough tightly and chill until firm, 15–20 minutes.
On a lightly floured surface, roll the dough to an even thickness of 1 inch and fold in thirds, like a letter. Wrap the dough and let it rest for at least 1 hour and up to overnight in the refrigerator.
To make the filling
Combine the toasted nuts,cinnamon and chocolate, if using, in a food processor and chop, pulsing the machine on and off, until an even, coarse paste forms.Add the dates and blend until well combined.
Shape and Bake
Preheat the oven to 375°F. Lightly spray cookie sheets with cooking spray or line them with parchment paper.
Divide the dough into 4 equal pieces and roll each into a 10-inch round. Spread one-fourth of the filling over each round,then cut each into 16 or fewer wedges depending on the size of the pastry desired. Roll the wedges up starting with the wide end.
In batches, bake until the cookies are a light golden brown, rotating the pans as necessary to bake evenly, 25–30 minutes. Transfer to wire racks and cool completely before serving.

Crunchy-Creamy Cannoli with Low fat Ricotta Cocoa Filling

Hope you all had a wonderful Thanksgiving feast.And all ready for the shopping spree on the most busiest shopping day of the year.Good luck!
Today is also Eid-ul-Adha.My hearty Eid wishes to all my viewers celebration this festival of sacrifice.
And also today happens to be the day all Daring bakers post their courageous bake of the month.Surprisingly this month we skipped the baking and devoured the festive Italian Pastry,cannoli.Thanks for Michele I was given an option of baking the deep fried shells,that I'm afraid didn't yield anything but crisp cannolis.Following the more authentic method of making them resulted in the most crisp shells.I rolled the dough very thin,so if you treasure a pasta machine or a tortilla\roti press,then making this pastry can be so much easier.Its not necessary to buy a cannoli forms\tubes to make these,one can always use a wooden stick about 5-6 inches long.Go wild with the fillings , I played around with some fresh produce of the season,cranberries and sweet potatoes.The second filling is low fat ricotta whipped with cocoa and garnished with nuts.

She chose the Italian Pastry, Cannolo (Cannoli is plural), using the cookbooks Lidia’s Italian-American Kitchen by Lidia Matticchio Bastianich and The Sopranos Family Cookbook by Allen Rucker; recipes by Michelle Scicolone, as ingredient/direction guides. She added her own modifications/changes, so the recipe is not 100% verbatim from either book.

Lidisano’s Cannoli
For CANNOLI SHELLS
1 cup (125 grams/8 ounces) all-purpose flour
1 cup (125 grams/8 ounces) whole wheat flour(fine ground)
2 tablespoons(28 grams/1 ounce) sugar
1/2 teaspoon (1.15 grams/0.04 ounces) ground cinnamon
1/2 teaspoon (approx. 3 grams/0.11 ounces) salt
3 tablespoons (42 grams/1.5 ounces) vegetable or olive oil
1 teaspoon (5 grams/0.18 ounces) white vinegar
Approximately 1/2 cup (approx. 59 grams/approx. 4 fluid ounces/approx. 125 ml) Fruit juice
1 large egg, separated (you will need the egg white but not the yolk)
Vegetable or any neutral oil for frying


Note - For chocolate cannoli dough, substitute a few tablespoons of the flour (about 25%) with a few tablespoons of dark, unsweetened cocoa powder (Dutch process) .

DIRECTIONS FOR MAKING SHELLS:
1. In the bowl of an electric stand mixer or food processor, combine the flour, sugar, cinnamon, and salt. Stir in the oil, vinegar, and enough of the juice to make a soft dough. Turn the dough out onto a lightly floured surface and knead until smooth and well blended, about 2 minutes. Shape the dough into a ball. Cover with plastic wrap and let rest in the fridge from 2 hours to overnight.

2 Cut the dough into two pieces. Keep the remaining dough covered while you work. Lightly flour a large cutting or pastry board and roll the dough until super thin, about 1/16 to 1/8” thick (An area of about 13 inches by 18 inches should give you that). Cut out 3 to 5-inch circles or squares.
Pasta Machine method:
*Divide the dough into 4 equal pieces. Starting at the middle setting, run one of the pieces of dough through the rollers of a pasta machine. Lightly dust the dough with flour as needed to keep it from sticking. Pass the dough through the machine repeatedly, until you reach the highest or second highest setting. The dough should be about 4 inches wide and thin enough to see your hand through.Continue rolling out the remaining dough. If you do not have enough cannoli tubes for all of the dough, lay the pieces of dough on sheets of plastic wrap and keep them covered until you are ready to use them.

3 Oil the outside of the cannoli tubes. Roll cut dough from the long side around each tube/form and dab a little egg white on the dough where the edges overlap. (Avoid getting egg white on the tube, or the pastry will stick to it.) Press well to seal. Set aside to let the egg white seal dry a little.

4. In a small deep heavy saucepan, pour enough oil to reach a depth of 2 inches. Heat the oil to 375°F (190 °C) on a deep fry thermometer, or until a small piece of the dough or bread cube placed in the oil sizzles and browns in 1 minute. Have ready a tray or sheet pan lined with paper towels or paper bags.

5. Carefully lower a few of the cannoli tubes into the hot oil. Do not crowd the pan. Fry the shells until golden, about 2 minutes, turning them so that they brown evenly.

8. Lift a cannoli tube with a wire skimmer or large slotted spoon, out of the oil. Using tongs, grasp the cannoli tube at one end. Very carefully remove the cannoli tube with the open sides straight up and down so that the oil flows back into the pan. Place the tube on paper towels or bags to drain. Repeat with the remaining tubes. While they are still hot, grasp the tubes with a potholder and pull the cannoli shells off the tubes with a pair of tongs, or with your hand protected by an oven mitt or towel. Let the shells cool completely on the paper towels. Place shells on cooling rack until ready to fill.

9. Repeat making and frying the shells with the remaining dough. If you are reusing the cannoli tubes, let them cool before wrapping them in the dough.

Fillings
Roasted Sweet Potato with fresh Cranberry sprinkles
Scrub and roasted a sweet potato in 375F oven for about 30-35 minutes until the caramelized sugars ooze out.Slightly cool and blend to a smooth paste.Blend in a tablespoon of honey or agave nectar for more sweetness.Use some chopped fresh or dried cranberries for sprinkling on top.
Low fat Chocolate Ricotta with toasted pistachios
Whip or blend together a cup of low fat ricotta with a tablespoon of unsweetened cocoa powder and a tablespoon of sweetener(Honey or Agave nectar or Brown rice syrup).Use toasted pistachios for garnishing.


ASSEMBLE THE CANNOLI:
When ready to serve..fill a pastry bag fitted with a 1/2-inch plain or star tip, or a ziploc bag, with the filling. If using a ziploc bag, cut about 1/2 inch off one corner. Insert the tip in the cannoli shell and squeeze gently until the shell is half filled. Turn the shell and fill the other side.

Cocoa Dark Chocolate Macaroons.....with no feet?


Despite the missing "feet"(the ruffled bottoms) these Classic French Macaroons tasted delectable,were still chewy and brittle in texture.Over half a dozen attempts,I couldn't figure out the reason why the bottoms did not develop each time as it were supposed to, in spite of taking all the care and caution as recommended by the expert bakers.May be its just a matter of practice,hopefully I'll have good macaroon days in the future.

I tried flavoring them with saffron,instant coffee but my favorite has to be the cocoa.There is a subtle difference between cocoa and chocolate.I use 100 % cocoa for the sandwiches and the filling is just Dark chocolate.


The 2009 October Daring Bakers’ challenge was brought to us by Ami S. She chose macarons from Claudia Fleming’s The Last Course: The Desserts of Gramercy Tavern as the challenge recipe.


Macarons, from Claudia Flemming' The Last Course: The Desserts Of Gramercy Tavern.

Confectioners’ (Icing) sugar: 2 ¼ cups (225 g, 8 oz.)
Almond flour: 2 cups (190 g, 6.7 oz.)
Granulated sugar: 2 tablespoons (25 g , .88 oz.)
Egg whites: 5 (Have at room temperature)

3 tablespoon of Dutch processed Cocoa powder for flavoring.Use any other dry powders like crushed saffron,Instant coffee,macha tea or lavender.

Preheat the oven to 200°F (93°C). Combine the confectioners’ sugar and almond flour in a medium bowl. If grinding your own nuts, combine nuts and a cup of confectioners’ sugar in the bowl of a food processor and grind until nuts are very fine and powdery.
Beat the egg whites in the clean dry bowl of a stand mixer until they hold soft peaks. Slowly add the granulated sugar and beat until the mixture holds stiff peaks.
Sift a third of the almond flour mixture into the meringue and fold gently to combine. If you are planning on adding zest or other flavorings to the batter, now is the time.I added the coco powder. Sift in the remaining almond flour in two batches. Be gentle! Don’t overfold, but fully incorporate your ingredients.
Spoon the mixture into a pastry bag fitted with a plain half-inch tip (Ateco #806). You can also use a Ziploc bag with a corner cut off. It’s easiest to fill your bag if you stand it up in a tall glass and fold the top down before spooning in the batter.
Pipe one-inch-sized (2.5 cm) mounds of batter onto baking sheets lined with nonstick liners (or parchment paper).
Bake the macaroon for 5 minutes. Remove the pan from the oven and raise the temperature to 375°F (190°C). Once the oven is up to temperature, put the pans back in the oven and bake for an additional 7 to 8 minutes, or lightly colored.
Cool on a rack before filling.

Dark chocolate Filling
1 cup dark chocolate ,chopped

Melt the chocolate over double broiler,fill about a teaspoon between each of the cookies.

Mini Chocolate Pumpkin Tarts

Conspicuous from the new header I bought and clicked the season's first pumpkins.The markets are filling with these gorgeous antioxidant rich fruit,how could I not pick one?. I ignored them in the past but not anymore.This is just my second year of cooking with pumpkins and I have lot of recipes to try with them ,so expect to see some of my favorite pumpkin dishes this season.

I find the cutting part particularly challenging,while some smaller variety can cut through with sharp knife,perhaps I did not have the muscle power for this particular pie pumpkin I also needed a hammer to pierce the knife in.Here is the complete procedure to make a pumpkin puree.And the seeds are real treasure ,don't trash them.


The first favorable dish with pumpkin is undoubtedly the PIE.Remember last year's eggless Pumpkin pie,light and lesser in calories.This season I baked with the Organic eggs ,relatively(25%) less in saturated fat,of course if on no-eggs diet one can always use the egg substitute.



Surprisingly I had a little helper in the kitchen.Unlike his elder brother he is always anxious about what's cooking.Helped me separate the seeds from the pumpkins and whisk the eggs for the tarts.I couldn't be more pleased.He loves anything chocolate,the mini portion also suited him just right.


Recipe
Makes 6 Mini tarts
Ingredients
For Crust
1/2 cup all purpose flour
3/4 cup Whole wheat flour
4 tablespoon(1/2 a stick) cold butter, cut in small cubes
1/4 teaspoon salt
1/2 cup ice cold water

For Filling
2 cups Pumpkin puree
1/2 cup brown or white sugar or 1/4 cup Agave nectar
*2 Organic eggs
1/2 cup dark chocolate chips(good quality with at least 60% Cocoa)
2 tablespoon Organic Whole milk
1 teaspoon pure vanilla

*for eggless filling use - 2 table spoon of cornstarch mixed with 1/4 cup whole milk

Method
Prepare the dough
Using a food processor pulse together the flour,salt and butter while adding the cold water to a smooth dough consistency. Or use 2 fork and break the butter in to flour and mix it up while adding the cold water.
Wrap the dough in a plastic wrap and allow to refrigerate for 30 minutes

Bake the Crust
Preheat Oven to 375F
Spread some all-purpose flour on the work surface.Unwrap the dough using a rolling pin, roll out half the dough and using 6 inch cutter or round lid of plastic container cut the dough in to circles.Transfer the cut dough in to each of the cups of muffin pan,press gently to smooth it out and poke some holes using fork to prevent it from rising.Repeat with rest of the dough and fill rest of the cups.Any left over dough can be used to bake mini fruit tarts.
Place the pan in the middle rack of the oven and bake the crust for about 10-15 minutes until the crust is lightly brown.
Bake the Tarts
Whisk the eggs or the egg substitute,stir in the sugar and pumpkin puree,combine well.
Melt the chocolate in the microwave or in a double broiler with 2 tablespoon of milk until smooth and completely melted.Gently mix the chocolate in the pumpkin mixture ,little at a time while whisking constantly.Pour about 3 tablespoon of filling in to each of the crusts in the pan.Bake about 30-35 minutes.Any leftover filling can be baked separately as pudding.
Cool completely and serve.The swirl of Nutella is totally optional,omit it to keep the dessert low in sugar.

Milan Cookies.



The July Daring Bakers' challenge was hosted by Nicole at Sweet Tooth. She chose Chocolate Covered Marshmallow Cookies and Milan Cookies from pastry chef Gale Gand of the Food Network.

With or\and choice in the challenge I picked what seemed easier ,the Milan cookies,a famous European sandwich cookie with luscious dark chocolate filling.To add to the scrumptiousness I dipped the cookie in some more goodness of dark chocolate and sprinkled with dried coconut.To say the least these make a delicious treat for any cookie monster and a exciting bake for a daring baker.


Recipe
Adapted from Gale Gand's Recipe
Prep Time: 20 min
Cook Time: 1 hr
Serves: about 1 dozen cookies

Ingredients for the Cookies
• 2 tablespoons Organic unsalted butter (vegan substitute : virgin pressed coconut oil), softened
. 2 tablespoon organic reduced fat milk or soy milk or almond milk
• 1/2 cup brown or white sugar
• 3 Organic egg whites(vegan substitute : 2 tablespoon arrowroot or corn starch + 2 tablespoon almond or rice milk)
• 1 teaspoon vanilla extract
• 1 teaspoon lemon extract(optional)
• 1/2 cup Whole wheat flour + 1/2 cup all purpose flour


for Cookie filling:
• 1/4 cup heavy cream(Vegan Substitute: thick coconut milk)
• 3/4 cup semisweet chocolate or Dark chocolate, chopped
• 1/2 teaspoon orange zest

some roasted nuts or grated coconut for sprinkling.

Method

1. In a large mixing bowl whisk butter and sugar until smooth and creamy.
2. Add the egg whites ,milk,gradually and then mix in the vanilla and lemon extracts.
3. Add the flour and mix until just well mixed.
4.For piping use a large ziploc(plastic storage bag),snip the end or a regular pastry bag with plain tip, pipe 1-inch sections of batter onto a parchment-lined sheet pan, spacing them 2 inches apart as they spread.
5. Bake in a preheated 350 degree oven for 10 minutes or until light golden brown around the edges. Let cool on the pan.
6. While waiting for the cookies to cool, in a small saucepan over medium flame, scald cream.
7. Pour hot cream over chocolate in a bowl, whisk to melt chocolate, add zest and blend well.
8. Set aside to cool (the mixture will thicken as it cools).
9. Spread a thin amount of the filling onto the flat side of a cookie while the filling is still soft and press the flat side of a second cookie on top.For more chocolate covering dip half of the cookies in the chocolate mixture,place on a large plate or sheet pan to cool.Sprinkle some powdered nuts or coconut before it cools.
10. Repeat with the remainder of the cookies.

Dare to Bake - Low Fat Apple Strudel from scratch?



The May Daring Bakers’ challenge was hosted by Linda of make life sweeter! and Courtney of Coco Cooks. They chose Apple Strudel from the recipe book Kaffeehaus: Exquisite Desserts from the Classic Cafés of Vienna, Budapest and Prague by Rick Rodgers.
Not as tough as it may seem after the first time,I baked the Strudel 3 times already and each time my friends and family simply loved it.If you can master the subtle rolling and stretching of the dough to a tissue-thin transparency then making this Classic Austrian Pastry can be as easy as baking a pie.Make sure you have ample workspace ,watch professionals roll the pastry here and here . The filling can be varied ,the juicy tart apples ,dried fruits and nuts is the original stuffing of these pastries, make it savory with spicy vegetables.I added Cocoa to the filling for a hint of chocolate flavor.The amount of fat can also be adjusted ,I experimented with brushing both oil or butter.The Olive oil thankfully worked well,one more reason to make this dessert more often.


Use Granny Smith apples for best tasting Apple strudels.
Recipe
Ingredients
For Strudel dough
1 1/3 cups unbleached All Purpose flour
1/8 teaspoon salt
7 tablespoons water, plus more if needed
2 tablespoons vegetable oil, plus additional for coating the dough
1/2 teaspoon cider vinegar

For Green Apple Cocoa Strudel Filling
2 medium Granny Smith Apples,Cored,peeled and sliced
3 tablespoons raisins or dried cranberries or cherries
1/4 teaspoon ground cinnamon
1 teaspoon cocoa powder(optional)
1 tablespoon Brown sugar
1 cup fresh bread crumbs
1 cup Walnuts.coarsely chopped

3 tablespoon Olive oil for brushing over the dough

Method
Prepare the Dough
Combine the flour and salt in a large mixing bowl. Mix the water, oil and vinegar in a measuring cup. Add the water/oil mixture to the flour and make a soft dough and knead for 2 minutes. Make sure it is not too dry, add a little more water if necessary.
Shape the dough into a ball and transfer it to a plate. Oil the top of the dough ball lightly. Cover the ball tightly with plastic wrap. Allow to stand for 30-90 minutes (longer is better).
Prepare the Filling
Mix the raisins,cinnamon ,apple ,walnuts and sugar in a bowl.Heat a tablespoons of oil in a large skillet over medium-high. Add the breadcrumbs and cook whilst stirring until golden and toasted. This will take about 3 minutes. Let it cool completely.
Roll the Dough tissue-thin
Put the rack in the upper third of the oven and preheat the oven to 400°F (200°C).
It would be best if you have a work area that you can walk around on all sides like a 36 inch (90 cm) round table or a work surface of 23 x 38 inches (60 x 100 cm). Cover your working area with table cloth, dust it with flour and rub it into the fabric. Put your dough ball in the middle and roll it out as much as you can.
Pick the dough up by holding it by an edge. This way the weight of the dough and gravity can help stretching it as it hangs. Using the back of your hands to gently stretch and pull the dough. You can use your forearms to support it.

The dough will become too large to hold. Put it on your work surface. Leave the thicker edge of the dough to hang over the edge of the table. Place your hands underneath the dough and stretch and pull the dough thinner using the backs of your hands. Stretch and pull the dough until it's about 2 feet (60 cm) wide and 3 feet (90 cm) long, it will be tissue-thin by this time. Cut away the thick dough around the edges with scissors. The dough is now ready to be filled.

Brush about 2 tablespoons of the oil over the dough using your hands (a bristle brush could tear the dough, you could use a special feather pastry brush instead of your hands). Sprinkle the dough with the bread crumbs. Spread apple mixture about 3 inches (8 cm) from the short edge of the dough in a 6-inch-(15cm)-wide strip.

Fold the short end of the dough onto the filling. Lift the tablecloth at the short end of the dough so that the strudel rolls onto itself. Transfer the strudel to the prepared baking sheet by lifting it. Tuck the ends under the strudel. Brush the top with the remaining oil.
Bake
Bake the strudel for about 30 minutes or until it is deep golden brown. Cool for at least 30 minutes before slicing. Use a serrated knife and serve either warm or at room temperature with any fruit sauce. It is best on the day it is baked.Store in refrigerator for up to a week,if desired warm at 300F oven for about 10 minutes before serving.

To make Raspberry sauce
Cook 1 cup of fresh or frozen berries with 1/2 cup of water until soft,blend to a smooth sauce,I like the crunch from seeds and didn't filter the seeds.Pour over the strudel slice after plating it.

To make Chocolate sauce
Melt 2 ounce of Dark chocolate chopped or chips with 2 tablespoon of whole milk in a double broiler,stir often until smooth and completely melted.Drizzle the warm sauce over the strudel.

Mamoul cookies and Cinnamon Tea



The melt-in-the-mouth delicious mamoul cookies are one of the most popular middle eastern cookie.I used to buy a box every time I shopped at the middle store ,besides dates these are available in variety of fillings with fruits and nuts.But when yours truly turned a health nut and started scrutinizing the processed foods nutrition labels,the mamoul were sadly out listed from my choice of cookies.Until I found Kate's recipe, simple enough to bake some of my own with desired amount of fat and sugar.Amazingly the recipe worked quite well even after reducing sugar and fat quantities ,and the Orange blossom water used imparts the lovely fragrance and hint of refreshing flavor.Traditionally wooden molds are used to shape the cookies,in her recipe kate shows a very easy method to make mamoul without the molds.Thanks to Kate,I can enjoy these delectable cookies again without guilt.

Makes about 12 cookies (3-inch long-oval cookies)
Ingredients:
1 cup fine semolina(sooji rava)
1/2 cup all purpose flour
2 tablespoon melted butter or ghee
2 teaspoon sugar
2 tablespoon Orange blossom water or rose water
1/2 cup reduced fat Milk(a little more if needed)
1/4 teaspoon powdered anise or ground anise seed(optional)
1/4 teaspoon baking powder
pinch of salt

For filling
1 cup(4 ounce) about 6-8 dates,pitted and pressed to make a paste
1/2 teaspoon cinnamon
For rolling
1/4 cup Walnuts or pistachios,chopped

Method
In a large bowl combine all the dry ingredients.Mix butter\ghee ,sugar,orange blossom water and milk in another bowl. Gradually add this in to the flour mixture,knead the dough until evenly mixed.The dough should be smooth and moist,add little more milk if needed.Cover and let rest for one hour.
Prepare the filling by combining the pressed dates and cinnamon .make 2 inch long rolls of the mixture and Set aside.
Preheat the oven to 350 degrees.
Make walnut-sized balls of the dough. Press down each of the balls using a thumb to form a cup to place the filling.place the date roll.Close the open end and roll between the palms to form a cylindrical shape.Place on a baking sheet and finish making the rest.
Bake for 18-20 minutes or until bottom is lightly brown. Completely cool on a rack.Store in an air tight container.Tastes best if consumed within 4-5 days since its low in fat and could dry out sooner.

Nutrition and Calories
Nutrition is in the core with mineral rich dates,also a good source of fiber and vitamins.The crust is pretty much all carbs.The fat calories are reduced to about 2 grams per cookie ,compared to about 9 grams in the original recipe.

Cinnamon Tea

The flavor of light Cinnamon Tea complements really well with mamoul.
Ingredients
3 cups water
1 teaspoon herbal tea mix or tea powder
2 cinnamon sticks(use ceylon variety)
1 teaspoon sugar

Method
Brew all the ingredients for about 15 minutes ;strain and serve hot.

Grapefruit Dark Chocolate Cake,Celebrating Nabeel's Birthday



It was this time of the year with nature's beauty at its best, budding greenery ,blooming flowers and signs of new life everywhere,my darling boy was born.The joy of cuddling with precious new born was indescribable.Nabeel(meaning "noble") was a chubby baby with angelic eyes , reached his milestones crawling to walking earlier than an average baby.He was healthy toddler who always appeared bigger than his age.
Nevertheless his diagnosis of asthma,didn't stop from being a sportive kid,which he loved to be,plays soccer and has an amazing interest in Math and reading.
My noble prince turned 6 last week,more than the cake he was excited about the kiddie laptop which he was patiently waiting to be gifted,a very small price indeed considering all the pain and discomfort he went through after a recent asthma episode. With tears trickling even while I write this post,he never gives up his fight for the healthy life he deserves and bounces back each time with vigor of a fighter and charm of an angel.

Grapefruit Dark Chocolate ganache Cake
I was inspired by Muneeba's incredible Red orange yogurt cake ,but with no luck finding the red oranges,I used a similar citrusy grapefruit.With good quality dark chocolate ,that makes lot of difference ,not too sweet and the dose of antioxidants in the fruit and cocoa made this an incredibly good celebration cake.
Ingredients
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 cup reduced fat or fat-free yogurt
1 cup grapefruit juice,freshly squeezed
2 teaspoon,zest of orange and\or grapefruit
3 large Organic eggs
1/2 cup brown or white sugar
1/2 cup Dark chocolate chips(I used ghirardelli 60% cocoa )
1/2 cup vegetable oil
For sprinkling on Cake
1/2 cup freshly squeeze grape fruit juice
2 tablespoon Orange blossom water
Ganache frosting
8 ounce semi-sweet or dark chocolate chips(I used ghirardelli 60% cocoa )
1 tablespoon Organic butter
3/4 cup Organic whole milk.

Nuts for coating the sides
1 cup nuts(Walnuts,almonds,macadamia nuts ,pecans or pistachios),finely chopped or coarsely processed

Method
Preheat the oven to 350 F.Grease 2 baking pans(8-inchs) with a non-stick cooking spray or little bit of butter and light sprinkle of all-purpose flour over the butter coating.
Prepare the batter
In mixing bowl,whisk the eggs for a minute combine with the sugar, oil ,yogurt,milk and juice.Set aside.In another large bowl,sift the dry ingredients flour,baking powder,soda and salt,mix in the chocolate chips.To the flour mixture slowly add the egg mixture,combine until smooth and well blended.
Bake
Pour the batter into the cake pans and bake about 30-35 minutes until a toothpick inserted comes out clean. Allow to cool at room temperature.

sprinkle the Juice and blossom water
After the cakes are completely cooled.flip and lay each of then on a rack or clean cutting board.Sprinkle the mixture of juice and orange blossom water all over.Allow to soak up for 10 minutes.

Prepare the Ganache
Place the Chocolate chips in a glass or steel bowl. Heat the milk and butter in a saucepan over medium heat. Bring just to a boil. Immediately pour the boiling milk over the chocolate and allow to stand for 5 minutes. Stir with a whisk until smooth.

Layer and frost the cake
Place one of the cake on a wire or metal rack placed on a clean plate to collect the drips.spread about 3 table spoons of the ganache over the top using a spatula.Place the other cake over the top,now pour the remaining ganache evenly all around the cake,allow to drip.The drips in the plate can be melted and used again in baking or to make chocolate truffles.
Coat the sides with nuts
Before the chocolate sets,take a tablespoon of nuts mixture at a time and stick them along the sides until coated all around the cake.

Garnish with fresh slices of grapefruit just before serving.Stays moist in a refrigerator for up to a week.

Chocolate Sweet Potatoes Marble Bundt Cake


The sumptuous chocolate cake with the hidden nutritional benefit of sweet potatoes was a fitting treat to celebrate our little one's second birthday.In just one year ,the apple of my eye has grown from being a crawling baby to a jumping ever so naughty toddler.Though just beginning in his vocal skills , babbling pretty much ,except for few simple words,my most loved one being thaan chu(for thank you);he has excelled in delighting himself with his explorations around the house,kitchen in particular is his favorite territory.Very often he sneaks in to the kitchen looking for reachable sweet munchies or grab some of his favorite pot and pans for a kitchen Orchestra.
As one would expect from a Health Nut Mom,I'm concerned about his big sweet tooth and prefer giving naturally sweet foods like fruits and dry fruits ,and almost never buy candies or chocolate treats.Thankfully besides chocolate the little guy absolutely loves fruits.
However I do allow occasional homemade goodies made with chocolate.And What's birthday without chocolate?Nothing quite says Happy birthday like Chocolate.The nutritional sweet potatoes add a silky moist texture to the cake and its mild flavors let this cake be predominately chocolate flavored.
This is a lofty cake rightly suited for feeding a crowd.But one can even make the same cake in a regular baking pan or a loaf pan,adjust the quantities proportionately.

Ingredients
For Chocolate layer
1 cup all purpose flour
1/2 cup whole wheat flour
1/2 cup unsweetened cocoa powder
2 Organic eggs
2 tablespoon Fat free Sour cream
1/2 cup brown sugar or use a natural sweetener like agave
1/2 cup semi sweet chocolate chips.
1/4 teaspoon salt
1/2 teaspoon baking powder
4 tablespoon(1/2 cup)Organic butter,melted and cooled,divided
1/2 cup reduced fat Organic milk

For Sweet Potato layer
1 cup all-purpose flour
1/2 cup Whole wheat flour
1 1\2 cup Sweet potato puree(1 whole medium size sweet potato),see how to cook sweet potatoes.
2 tablespoon Fat free Sour cream
2 Organic eggs
1/2 cup brown sugar or use a natural sweetener like agave
1/4 teaspoon salt
1/2 teaspoon baking powder
4 tablespoon(1/2 cup)Organic butter,melted and cooled
1/2 cup reduced fat Organic milk


Method
Preheat oven to 350F.Prepare the Bundt pan,first butter then dust with all purpose flour,tap out any excess flour.

Prepare the Chocolate ganache for the Chocolate layer
Melt 2 tablespoon of butter and the semisweet chocolate chips in a bowl(glass or steel) placed over saucepan with gently simmering water(double broiler).Stir occasionally until the mixture is smooth.Set the bowl aside.

Prepare chocolate Layer
Sift all the dry ingredients(flours and powders) in large mixing bowl.
In another mixing bowl whisk together melted butter and sugar ,Crack the eggs and whisk then add the prepared chocolate ganache, stir in milk ,sour cream and combine until mixture comes together. Now add the dry mixture slowly in to the wet mixture while stirring it.

Prepare the Sweet Potato Layer
Repeat the same.Sift all the dry ingredients(flours and powders) in large mixing bowl.In another mixing bowl whisk together melted butter and sugar ,Crack the eggs and whisk then add the sweet potato, stir in milk ,sour cream and combine until mixture comes together. Now add the dry mixture slowly in to the wet mixture while stirring it.

Bake
For marble pattern,add spoonful of sweet potato and chocolate mixture alternately. Then make a swirl pattern using a table knife through the batter to marble them.

Bake for 55 to 60 minutes, or until a knife inserted into the center of the cake comes out clean.Cool on rack for 30 minutes before trying to unmold it.Cool,slice and serve.Prepare extra chocolate ganache and drizzle on the cake,if desired.

Daring Bakers Challenge February: Flourless Chocolate cup cakes with No-Churn Pomegranate Ice Cream


The February 2009 challenge is hosted by Wendy of WMPE's blog and Dharm of Dad ~ Baker & Chef.They have chosen a Chocolate Valentino cake by Chef Wan; a Vanilla Ice Cream recipe from Dharm and a Vanilla Ice Cream recipe from Wendy as the challenge.

The flour less chocolate cake was total chocoholic's delight,reminded me of the Chocolate Espresso Mousse cake I baked earlier,that was also flour-free.I don't miss making low-fat recipes whenever possible,since I already experimented this kind of cake with no-fat I use just quarter of the fat as mentioned in the Original Daring Baker's recipe,it worked just fine for me.
For the Ice cream thankfully we were allowed to choose our own flavor,Pomegranate was ultimate pick.Since fresh fruit is not in season I choose the store-bought 100% Pomegranate Juice.To make it easier I made a No-churn Ice-cream that does not require the Ice-cream maker.
Bringing the Ice cream together with Cupcakes was a little messy,but worth the effort.These Frozen Cupcakes would make a perfect dessert on hot summer days,speaking of warmth,its still predominantly chilling here,and I'm yearning for a warm change.



Flourless Chocolate Cupcakes
Recipe from Sweet Treats by Chef Wan

Makes 10 Medium cupcakes

Ingredients

16 ounces (1 pound) (454 grams) of semisweet chocolate, roughly chopped
2 tablespoons of unsalted Organic butter
5 large Organic eggs ,separated

Method
1. Put chocolate and butter in a heatproof bowl and set over a pan of simmering water (the bottom of the bowl should not touch the water) and melt, stirring often.
2. While your chocolate butter mixture is cooling,line with the muffin pan with parchment cups or spray a little non-stick spray.
3. Separate the egg yolks from the egg whites and put into two medium/large bowls.
4. Whip the egg whites in a medium/large grease free bowl until stiff peaks are formed (do not over-whip or the cake will be dry).
5. With the same beater beat the egg yolks together.
6. Add the egg yolks to the cooled chocolate.
7. Fold in 1/3 of the egg whites into the chocolate mixture and follow with remaining 2/3rds. Fold until no white remains without deflating the batter. {link of folding demonstration}
8. Pour batter into the prepared muffin pan, the batter should fill the cups 3/4 of the way full, and bake at 375F/190C
9. Bake for 25 minutes until crust appears like brownie cake.The cake will puff up considerably but will collapse later.
10.Get the cup cakes out and cool on a rack.

Recipe adapted from Nigella's recipe.And David Lebovitz's method of making Ice cream without machine.
No-Churn Pomegranate Ice Cream
3 cups of pomegranate juice,preferably POM
2 cups Coconut milk(or use 1 cup half & half milk and 1 cup light cream)

Method
Whisk the cream with the juice until soft peaks forms.Transfer in a freezer proof container,cover tightly and place in freezer.After about 30 minutes,while the mixture is just starting to set ,stir and return to the freezer.Repeat this 3-4 times i.e every 30 minutes until mixture is almost frozen takes about 2-3 hours.Cover and keep in refrigerator until time to serve.


Assemble the cupcakes and Ice cream
Check out this cool page,which gave me the idea of making Ice cream cupcakes.
After the cup cakes are completely cooled,removed its parchment cups if used.Transfer cupcakes back to the muffin pans,even out the surface,since the chocolate cupcakes were a little hallow on the inside after baking,I simply had to lightly press it until almost half full.Cover with plastic wrap and freeze the cupcakes for at least 2 hours until hardened.
Get the Ice cream out ,let sit for 30 minutes until softened to work with.After the cupcakes are frozen,scoop the ice cream and set over the cupcakes just until the cups are full.Cover and return to freezer,let set for 2-3 hours before trying to get it out.Warm a small sharp knife under hot running water ,run the warm knife along the edges of the ice cream cupcake until it’s easily lifted out of it’s tin.

Serve
I made some pomegranate syrup,by reducing 1 cup Pomegranate juice with a tablespoon of brown sugar to 1/2 a cup.Cool completely before drizzling on the cupcakes.Garnish with fresh berries,I used the tangy sweet blackberries.

Whole Wheat Ginger Spice Cookies


Ginger snap cookies are one of the America's favorite spice cookies made with ginger and spices like cinnamon,cloves and nutmeg.I used fresh ginger instead of ground dry ginger to add real zest to the ginger snap cookies.Just the other day a good friend of mine gifted me a box of fresh spices mix (aka garam masala),I could almost instantly feel the potency of the spices with the strong aroma and heat from taste of the spices.Only one teaspoon of the fresh masala was enough to spice up the cookies. I don't use molasses so used date syrup instead,although not very sweet these cookies were by far the spiciest cookies I ever tasted,just right to beat the chill in the air.
Ingredients
2 cups Whole Wheat flour
1 teaspoon freshly grated ginger
1 teaspoon Spice mix(ground cinnamon,cloves,cumin and black pepper)
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup brown sugar
1/4 cup date syrup or molasses.
1 large Organic Egg
4 tablespoon butter,softened
2 tablespoon olive oil
2 tablespoon sugar crystals or raw sugar for topping

makes about 16-18 medium size cookies.
Method
Mix the flour,baking soda,salt and spices in a bowl.In another bowl beat butter and sugar until smooth,whisk in the egg and the syrup.Mix in the egg mixture in to the flour mixture and knead in to a smooth dough.Sprinkle all purpose flour on your work surface and roll 2 logs with the dough.Slice using a knife,dip one side in to the sugar crystals and lay on a greased cookie sheet spacing them about 2 inches apart.bake for about 15-20 minutes until cracked on the top and lightly browned.cool on rack and store in air tight container.
