Broccoli Cheese Soup



No Velveeta found in this recipe!

1/2 cup butter
1/4 onion, chopped
1 (16 ounce) chopped broccoli (from my garden:)
4 (14.5 ounce) cans veggie/chicken broth
4 oz cream cheese
1-2 cups sharp cheddar, shredded (depending on how "cheesy" you want it)
1 TBS garlic powder

In a stockpot, melt butter over medium heat. Cook onion in butter until softened. Stir in broccoli, and cover with chicken broth. Simmer until broccoli is tender, 10 to 15 minutes. Reduce heat, and stir in cheeses until melted. Mix in garlic powder. Enjoy! Serves 6
